Keto Coconut Pancakes / Waffles
(Individual Serving)
Ingredients
4 large eggs
4 oz. cream cheese, room temperature
1 teaspoon monk fruit
1+1/2 teaspoons baking powder
4 tablespoons coconut flour
4 Tablespoons butter
Directions
In a blender or food processor, mix all ingredients except the butter.
In a skillet over medium heat, melt 2 tbsp butter. Make sure pan is coated with butter.
Pour 1/4 cup portion per pancake in pan. These will not get air bubbles like your normal pancakes but they will get puffy, usually about 2 -3 minutes.
Turn and wait another 2 min.
Melt remaining butter and cook remaining dough.
Serve warm with whipping cream and strawberries!!!
