Keto Coconut Pancakes / Waffles

(Individual Serving)

Ingredients

  • 4 large eggs

  • 4 oz. cream cheese, room temperature

  • 1 teaspoon monk fruit

  • 1+1/2 teaspoons baking powder

  • 4 tablespoons coconut flour

  • 4 Tablespoons butter

Directions

  1. In a blender or food processor, mix all ingredients except the butter.

  2. In a skillet over medium heat, melt 2 tbsp butter. Make sure pan is coated with butter.

  3. Pour 1/4 cup portion per pancake in pan. These will not get air bubbles like your normal pancakes but they will get puffy, usually about 2 -3 minutes.

  4. Turn and wait another 2 min.

  5. Melt remaining butter and cook remaining dough.

  6. Serve warm with whipping cream and strawberries!!!
