Ingredients

  • 4 slices bacon, cooked and chopped

  • 4 eggs

  • 1/2 cup salsa (such as Pace(R))

  • 1/2 cup almond flour

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 8 muffin cups with cooking spray.

  2. Blend bacon, eggs, salsa, and almond flour together in a blender on medium speed until thoroughly combined, about 30 seconds.

  3. Pour mixture into prepared muffin cups.

  4. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 30 minutes. Let cool 10 minutes before serving.
