Keto Breakfast Enchiladas

(Individual Serving)

Ingredients

  • 3 slices bacon (reserve about 1 tbsp drippings)

  • 1 egg

  • 1 tablespoon heavy cream

  • pink Himalayan salt, to taste

  • Pepper, to taste

  • fresh herbs (optional)

  • 1 tablespoon butter (if not using bacon drippings)

  • 1/2 cup spinach, washed, drained and diced

  • 1/4 avocado, diced

  • 1/2 cup mozzarella cheese, grated

  • 1/4 cup ham (optional)

Directions

  1. Cook bacon. While bacon is cooking whip together: egg, cream, salt, pepper, and herbs.

  2. When bacon is cooked and cooled slightly, break it up into pieces.

  3. In the reserved bacon drippings, cook the egg mixture (or use the butter as an alternative).

  4. After the egg mixture has started cooking, put some of the  grated mozzarella cheese around the outside edge of the egg mixture around the pan 

  5. When the egg mixture is done, place on plate with a paper towel to soak extra grease.

  6. Build the enchilada.  Put avocado, spinach, meat (if using), cheese and cooked bacon bits.
